Why are my bao buns gummy inside?

A gummy center can look wet, glossy, compressed, or slightly translucent. That is a different signal from a dry, tight crumb. Before changing flour or adding more steam time, separate crumb type, proof state, and whether the bun was fresh or reheated.

How to narrow it

Use the timing and the strongest visible clue.

1. Is it truly gummy, or just dense?

A dry, tight crumb points toward a different branch from a wet or glossy crumb. If the bun barely rose before steaming, proofing or yeast activity should be checked before blaming cooking time.

2. Did it happen only after chilling or freezing?

Treat reheated texture as a separate branch. Steamed buns naturally firm when cold, and storage changes moisture and crumb structure. Compare one fresh bun with one reheated bun before changing the dough formula.

3. Did only part of the batch turn gummy?

Uneven failures make a single formula-wide cause less convincing. Steamer position, condensation, bun size, or local heat exposure may deserve a controlled test.

Next-batch rule

Cut one bun from the center of the steamer and one from the edge. Compare fresh crumb first. If fresh buns are good but reheated buns become gummy, keep the recipe fixed and test only the storage/reheat method.
